In Sweden we have a very tasty and mature cheese called “Västerbotten cheese.” It would be hard to find this cheese outside of the Nordics, so the English version of the recipe uses other cheese options. This pie is a traditional Swedish pie and it is always delicious, but our good friends, Inge and Lena Moen from Västerås (a city in Sweden), has taken this pie to new heights by adding a hint of chili and crispy fried chanterelles. These days I only make their version of the pie. I promise that you will love this cheese pie with chili and chanterelles.
You will need
Pie shell
4 ½ oz butter (125 g)
1 ¼ cups all-purpose flour (3 dl)
1 tbsp cold water
Filling
10.5 oz grated Västerbotten cheese (about 300 g). Substitute with 50 % grated aged parmesan cheese and 50 % of a strong and mature cheddar cheese
3 eggs
3/4 cup heavy cream (2 dl)
1/4 tsp black pepper
1/2 tsp salt
1/4 tsp cayenne pepper
1 tbsp sambal oelek
2 tbsp butter
4–6 oz chanterelles, crispy fried (weight when pre-cooked weight) (100–150 g)

Freshly ground black pepper
How to make it
Start with the pie shell
1. Preheat the oven to 392°F (200°C).
2. Place the butter and flour in a food processor and mix until the dough becomes crumbly.

3. Add the water and continue mixing until the dough comes together and is smooth.

4. Press the dough into a springform pan with removable sides (about 9.5 inches/24 cm in diameter). Prick the bottom of the pie shell with a fork and chill the crust in the refrigerator for about 15-30 minutes.
5. Pre-bake the crust in the middle of the oven for about 10 minutes.
Filling
6. Spread a thin and even layer of sambal oelek on the pie crust for a hint of chili flavor.

7. Place the pre-cooked chanterelles in a hot, dry frying pan. Cook while stirring until the mushrooms are fully dry.
4–6 oz precooked chanterelles (100–150 g)
8. Add the butter and sauté the mushrooms, stirring until they have a nice color. Season with salt and pepper. Spread the fried mushrooms over the bottom of the pie crust.

9. In a bowl, whisk together the eggs, cream, cheese, black pepper, cayenne pepper, and salt. Pour the cheese mixture into the pie crust.

10. Bake the pie in the middle of the oven for about 20 minutes.
Let the pie cool before serving.
