Chicken teriyaki skewers

This dish combines the texture of the juicy grilled chicken with the sweet-sour and umami-rich teriyaki sauce, creating a harmony that appeals to both the taste buds and all the senses. A perfect dish to serve as a tapas, together with rice, at a buffet or at a picnic. This recipe is characterized by simplicity but results in amazing flavors inspired by Japanese cooking.


Chicken Teriyaki skewers
 

You will need

1.1 lbs. chicken breast

Salt

Freshly grounded black pepper

0.42 cups + 0.63 cups Teriyaki sauce (see recipe below)

Neutral oil

Chopped spring onion

Roasted sesame seeds


Teriyaki sauce

0,4 cup water

½ tsp dashi powder

0,4 cup Japanese soy

0, 3-0,4 cup sugar

2 tbsp rice vinegar

1 tbsp fresh ginger, grated

2 tsp grated garlic

¼ tsp gochugaru

2 tbsp cornstarch

 

How to make it

Start by making the teriyaki sauce


1. Pour 2 tbsp of the water into a small bowl. Pour the rest of the water into a small saucepan along with all other ingredients except the cornstarch.

1/2 tsp dashi powder

0,4 cup Japanese soy

0, 3-0,4 cup sugar

2 tbsp rice vinegar

1 tbsp fresh ginger, grated

2 tsp grated garlic

1/4 tsp gochugaru


2. Stir the cornstarch with the water that was put in the bowl.

3. Boil the sauce and stir in the cornstarch and water. Leave on heat while stirring until it’s the right thickness.


4. Cut the chicken into strips about 0.8 inches thick. Pound out the strips with a meat mallet so that they are max 0.4 inches thick.

5. Salt and pepper on both sides of the strips.

6. Put the strips in a plastic bag and pour on Teriyaki sauce. Massage the sauce into the chicken and let marinate for at least 1 hour but preferably longer.

7. Thread the chicken strips onto wooden skewers (soak the wooden skewers in a water bath for at least 20 minutes before the chicken is threaded on, if they are to be put on the grill).


8. Fry in neutral oil in a frying pan on high medium heat for about 8 minutes or until cooked through. Turn the skewers now and then and brush on more teriyaki sauce as you go.

9. Sprinkle chopped spring onion and roasted sesame seeds over the chicken and serve as a tapas or together with Japanese rice.
