Green pea mayonnaise

This fresh and flavorful sauce combines the sweetness of green peas with the creaminess of mayonnaise, and it brings out the best in your fish dishes. Whether you're serving classic fish sticks, breaded plaice or a homemade fish burger, the Green pea mayonnaise will add a new dimension of both flavor and texture to your dishes.


Green pea mayonnaise
 

You will need

1 tbsp butter

0.7 oz shallots, finely chopped

2 cloves of garlic, grated

0.4 cups cream

0.8 cups green peas, thawed

0.4 cups mayonnaise, Hellmans or homemade

½ tsp old bay seasoning

½ tsp pul biber (Aleppo pepper)

1 tsp kosher salt

Freshly ground black pepper

1 tsp Dijon mustard

½ - 1 tsp lemon zest, finely grated

 

How to make it

1. Sauté garlic and shallots in butter for a short while without browning.

2 cloves of garlic, grated

0.7 oz shallots, finely chopped


2. Increase the heat and add cream and peas and let simmer for 5 minutes.

0.4 cups cream

0.8 cups green peas, thawed


3. Blend peas and cream into a smooth puree. Let it cool and mix the puree with mayonnaise.

4. Season with barbecue seasoning, pul biber, flake salt, freshly ground black pepper, Dijon mustard, and finely grated lemon zest.
