You will need
10.5 oz chanterelles, cleaned and cut into pieces
2 tbsp butter
2 cloves of garlic, finely grated
0.84 cup dried mushrooms, finely ground
2 cubes mushroom bouillon
1 tsp truffle salt
Freshly ground black pepper
1/2 tsp Pul biber
1/2 tsp honey
1.3 cups heavy cream
1 tbsp truffle oil
4 slices of Levain bread
Butter
1 clove of garlic, peeled and cut in half
Arugula
Shaved flakes of Parmesan (optional)
How to make it
1. Heat a frying pan and add the chanterelles. Fry on high heat without fat. Keep stirring until all the liquid has evaporated.

2. Add butter and fry on high medium heat while stirring for about 10 minutes.

3. Add garlic and dried mushrooms. Mix well.

4. Crumble the bouillon cubes and add together with truffle salt, Pul biber, honey, and freshly ground black pepper. Mix well.

5. Add 1/2 cup of cream at a time and let it boil and thicken.

6. Remove from the heat and finish by adding truffle oil. Mix well.

7. Heat a large frying pan and add the butter. Fry the slices of Levain on both sides until they are golden brown. Rub one side with the cut surface of the halved garlic clove.

1 clove of garlic, peeled and cut in half
8. Place a handful of arugula leaves on individual plates. Put on a slice of Levain and cover the bread with the mushroom sauce. Optionally shave over some Parmesan.
